Penne With Mozzarella, Red Peppers and Capers

 

 

Smooth, tubular penne with mozzarella, red peppers and capers is an easy pasta for a weeknight dinner.

    Cook penne in plenty of boiling salted water until al dente.

    In the meantime, slice spring onions thinly and sauté with oil and a spoonful of capers. Add diced bell pepper. Drain pasta when al dente and add to the pan. Toss quickly and add diced mozzarella. As soon as mozzarella begins to stretch and melt, remove from the heat. Sprinkle pasta with chopped parsley and serve immediately.
